week 2 cooking

This week I am learning to cook.Yesterday I made an apple crisp and an upside down plum cake. I learned three ways to mix things: creaming , stirring , beating. Today I am going to make vegetable soup for mum. I'm going to use fresh vegies from our garden. I was wondering if other people like shows like master chef? I would love to learn to chop really fast and invent my own dishes. My favourite things at moment are quesidias . Let me know if you want the plum cake recipe. Theo

  4. my plum cake recipe Ingredients
    8 Plums – (pitted & quartered)
    1/2 cup Pistachio nuts – roughly chopped
    1/2 cup Butter
    1 cup Sugar
    2 Eggs
    1 tsp Vanilla Extract
    1 tsp Almond Extract
    1 cup Flour
    1 tbsp Cinnamon powder
    1 tsp Nutmeg powder
    1 tsp Baking powder
    1/4 tsp Salt

    Spiced Topping
    2 tbsp Brown Sugar
    1 tsp Cinnamon powder

    Method
    Preheat the oven to 375 deg F. Grease & line bottom of a non-stick cake pan with parchment paper and keep it ready.

    Sift flour, cinnamon, nutmeg & baking powder and salt together and keep aside.

    Sprinkle 1/4 cup chopped pistachios on the base of tin. Top evenly with chopped plums.

    Cream butter & sugar till fluffy. Add eggs and both the extracts & beat well. Finally mix in the flour mixture. Pour this batter evenly over the plums & pistachios.

    Mix the cinnamon & sugar for the topping in a small bowl. Sprinkle over the top evenly & bake for 35-40 minutes.

    Allow to cool in the pan for 20 minutes. Then turn out onto rack & gently peel off the lining off the top, scraping back any fruit that might cling on to the lining.

    Give it a generous sprinkling of powdered sugar & the remaining chopped pistachios. Serve this colorful and healthy Spiced Plum Cake with a drizzle of whipped cream or a scoop of vanilla ice-cream!
